The distinctive flavour of wild service berries from Prinz

Hafele Wild Service Berry Brandy has a powerful nose with pleasant notes of marzipan and nougat. On the palate, it reveals a harmonious interplay of mild sweetness and tart, nutty spiciness.

What makes a wild service berry brandy so rare?

Wild Service berry brandy is one of the most precious brandies in the world. The reason? It takes 20 to 30 years for the service tree to bear fruit for the first time. After that, fruit grows, but sometimes at intervals of several years.

Between May and July, small white flowers appear, and these are very popular with bees. The wild service berry fruit ripens at the end of September and October. The reddish-brown berry-like pome fruit is harvested from our single-standing local standard trees.

We refine around 30 kg of service berry fruit per litre of Hafele Service Berry Brandy. At Obsthof, the hand-sorted fruit is washed, de-stemmed and turned into fruit mash. The subsequent fermentation, multiple distillations and stoneware storage is carried out according to Prinz's tried and tested Hafele brandy process. Only when the distillate has developed its distinctive varietal character do we bring the brandy to a drinking strength of 43 % vol with spring water.

Interesting facts about the service tree

The service tree belongs to the rose family. Some people know it by other names, such as Chequers tree and Sorbus torminalis. In folk medicine, the service tree's fruits, which are rich in tannins and fibre, were considered to be beneficial for digestive complaints.

The deciduous tree grows 15 to 25 metres high and can be up to 250 years old. Its wood is among the hardest in Europe. In Austria and Germany, the service tree is one of the rarest tree species on the Red List.

Enjoyment recommendation: The strong spicy character of bitter almonds and its soft, slightly velvety texture make this exclusive Wild Service Berry Brandy an exceptional drink for gourmets. As an accompaniment to food, this brandy harmonises particularly well with lamb and venison dishes. The delicate rarity is best enjoyed in a Prinz Hafele Glass or a Prinz Schnapps Glass.
